Ingredients
Eggs – 2 nos
Honey – 1/4th cup
Almond milk or even water – 1/4th cup
Pure vanilla extract – 2 teaspoons
Pure almond extract – 1 teaspoon
Blanched and finely ground almond meal – 1 ½ cup
Fine sea salt – ½ teaspoon
Baking powder – 1 teaspoon
Baking soda – ½ teaspoon
Arrowroot powder or cornstarch – 1 tablespoon
Cardamom – 1/8th teaspoon
Pears – 3 pieces which are peeled, cut and cored.
Direction
Put the entire ingredients in a blender excluding the pears. Process the blender until a smoothie is prepared. It might take about one or two minutes in a blender. Pour the entire batter in a bowl and then fold the diced pears. Heat a skillet or griddle at medium heat. Spray gluten free oil. Scoop 2 tablespoon of batter per pancake. Keep cooking until small bubbles form on top of the pancakes. It will take about 2 minutes. Flip it and cook till the pancakes turn golden brown. Transfer it to a plate and serve.
